Is there any way to delete classmate birthdays from the "What's New" tab? Since birthdays are already on the homepage, they aren't really needed. I'd like classmates who don't visit very often to be able to easily find new posts etc. without having to page through birthdays that were weeks ago.

The What's New page does not have any customization options.

You can manually delete them. I clean up that page each month by deleting the "So and so has a birthday today" from the previous month. Don't delete the ones with comments or you will remove them from the profile page too.
