One of my classmates just created his profile and he is attending but he did not pay yet becuase he is not sure if his wife is attending and was not sure how to handle that transaction.

I know that an addtional item "person" can be added in the payment system anytime but how does a classmate add more attendees after they have intially noted that only one will be attending?

The Classmate can add any additional item for sale as you noted, but the # of attendees and that attendees name needs to be added by an Admin if the Classmate has already submitted the registration. If Classmates had the ability to change # of attendees at any time that would be a problem for many Admins trying to keep up with attendance counts, dinners, etc. So the theory is you need to be aware of the additional attendee, thus we ask the Classmate to have you add it to the system so you're aware of it.
