Hi Brad and gang: Would it be possible to have a default set so that the administrator automatically gets an email when a classmate updates their profile?

Sort of. The new "Profile Subscriptions" page under the Members links (when it's done anyway) will allow you to simply select all Clasmates and subsribe to the entire list. You and any other Classmates will have this option.
