I understood from previous posts that adding a teacher as guest allows them to enter a profile but doesn't allow them to see all of the classmate profiles. I entered a test guest and they do get to see all profiles. Also, can I change the profile questions for guests? Thank you.

Sorry, you understood wrong. Guests can see everything that a normal logged in classmate sees. They have all of the same profile questions that classmates have, too.
