I know the default for the flag icon is the country where the school is located. However, we are a government school that was located in Paris, France. Some of our classmate profiles show the French flag, and those who knew enough to change it, show the USA flag.
I'll change the profiles one by one if you could make our default USA.

There can be only one system default. As you pointed out, the default is the country where the school is located. 99% + of the time this is exactly what's needed. Your case is in fact the 1%. Fortunately as you mentioned, if somebody selects the French flag, you can easily change it to the US Flag for them. I would assume this won't be a very long term issue, as once people have joined and the flag is correct, it's permanent. Thus I suggest you keep doing what you're doing. I'm sorry if that's a little annoying for you to have to fix it for people, but adding school-specific stuff in the master code isn't a good idea.
