We have classmates that have signed up for the reunion, but I have not set up a payment plan yet for reunion tickets - Can we still use the new planner without disrupting things?

You current cannot switch from the old store to the new store in an automated way. What you can do though is reset your current reunion. It will archive all of your data so you won't actually lose anything. Then start a new reunion. When you do that you'll automatically have the new 'add to cart' store. You should then manually re-enter your already-registered Classmates into the new store's attendees area.
