We have a classmate who hasn't registered on the site, yet their birthday is showing on the Upcoming Birthdays (it's today, actually). How is this possible?

On the Preferences page, under "Admin-entered Profile details" .. you have selected : Show Admin-entered Classmate Profile details prior to Classmate joining the site.
