Is there a way to change the status of a classmate from "member" to "guest member"?

Yes,

Do the following:
Manage Classmates
Enter/Edit Classmates
Choose the classmate and select DETAILS
Show On Class List:        [ ] Yes [ ] No [ ] Show as Guest Member

Choose "Show as Guest Member"
Save the changes.
