I want to be able to have a private admin "vote" in the Admin forum for Admin eyes only. How can I do this.

There is no automated Poll Feature that exists just within the confines of the private Administrator Forums. Thus my best recommendation for you is to post your poll as a New Topic in the Administrator Forums and let Admins respond in the thread. You'd have to tabulate any answers manually.
