My question is, Is it possible to edit the "Spouse/Partner" line to just read "Spouse" on my website(s)?

Sure, just click on your Profile Generator link and change it to whatever you want. You have full control over what constitutes a Classmate Profile. One thing to note, the early Class Creator had no Profile Generator feature and that field was hard coded as "Spouse" only -- which created quite a stir. Many people wrote in wanting to change that field including Admins that had couples living together who never married. It's quite possible changing that field will cause the same problems for you as the Admin of the site that it did for us early on, but in any case, it's fully up to you how you'd prefer to phrase that or any other Profile question.
