I have rec'd several request from classmates of other years that would like to get back in touch with people from our class. How do I go about granting access without actually having them listed as a classmate for our year?

If it was me I would put a mark by the nonclassmate and leave the classmates of your class the same.

I prefer to not give non-classmates open access and instead write the person they want to correspond with and give them that person's email address. Then they can decide if they want to correspond.

There are a number of people who would have graduated with our class but moved away or left school early. If they get in touch with me, I add them as a classmate.

"Guest Accounts" (accounts that don't appear on your Class List) are a frequently asked for item, and we have it on "the list." We have several more pressing tasks ahead of creating the ability to add guest accounts, but the functionality is coming just as soon as we can get to it.
